Haarstad has been creating tasty libations up and down the West Coast from San Diego, CA to his hometown of Seattle, WA. Influenced by classic, pre-prohibition cocktails, Dustin seeks to represent cocktail history while defining modern day cocktail culture. Currently Haarstad works at the 4-time James Beard Award nominated Canon: Whiskey and Bitters Emporium, which has won numerous awards withing the industy. Along with Jamie Boudreau and the rest of the Canon crew, Dustin has developed an understanding and respect for the cocktail world, immersing himself in cocktail culture, knowledge and the craft behind it. Haarstad forges a path in his passion for the historic, innovative and delicious.
Dustin is a Certified Spirits Professional of the United States Bartenders Guild, a Certified Mezcalier Level II, and Beer Server by Cicerone. When not behind the stick, you can find him immersed in his passion for music, literature and traveling.
